Frank's stuffed Maryland Rockfish Fillets

Works well with snapper, flounder or halibut.


2 lb. rock fillet (2 fillets)
1/4 cup butter
3 tablespoons chopped celery
1 lb crabmeat
2 tablespoons parsley
1 cup bread crumbs
1/4 cup half and half
Frank's seasoning to taste
Melt butter, cook onions and celery until tender. Add crabmeat, parsley, seasoning, bread crumbs and half and half. Mix well. Lay crab stuffing between the two pieces of rock fillet. Spread a thin layer of mayo. on the top fillet to keep it moist. Bake in 375 degee oven for about 30-35 minutes or until fish flakes easily with a fork.
